“I prepped and cooked all afternoon but I still have a lot to do. Have to make the prepped eggplant dish. Prep lettuce and greens. Make smoothie. Prep pineapple and make a pumpkin cheesecake. Going to work tomorrow too. Wish I could fit in painting too. Below is chickpeas and crustless apple pie without sugar. And prepped some greens but it took a long time. I guess cooking is alot of work. Maybe it will get easier”

Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add chopped onion and garlic, sauté until translucent (about 3-4 minutes).
3.
Stir in diced eggplant and bell pepper, cooking until softened (about 5-7 minutes).

Add chickpeas, spinach (or collard greens), cumin, paprika, salt, and pepper. Cook until greens are wilted (about 5 minutes).
5.
Finish with a squeeze of lemon juice and serve warm.

1 can (15 oz) chickpeas, drained and rinsed
2.
2 cups fresh spinach or collard greens, chopped
3.
1 medium eggplant, diced
4.
1 bell pepper, diced
5.
1 medium onion, chopped
6.
2 cloves garlic, minced
7.
1 tablespoon olive oil
8.
1 teaspoon cumin
9.
1 teaspoon paprika
10.
Salt and pepper to taste
11.
Juice of 1 lemon
