Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.

On a baking sheet, toss the zucchini, red onion, cherry tomatoes, and broccoli with olive oil, cumin, turmeric, salt, and pepper. Spread evenly.
4.
Roast the vegetables in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
5.
In a large bowl, combine the cooked chickpeas, boiled potatoes, and roasted vegetables. Mix gently to combine.
6.
Serve warm, garnished with fresh parsley.

1 red onion, sliced

1 teaspoon cumin
9.
1 teaspoon turmeric

Salt and pepper to taste
11.
Fresh parsley for garnish
