Instructions
1.
In a large bowl, combine the chickpeas, cooked quinoa, chopped kale, diced tomato, grated carrot, diced cucumber, and diced bell pepper.
2.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine all ingredients.
4.
Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

2 cups kale, chopped

1 medium tomato, diced

9.
1 tablespoon lemon juice

Salt and pepper to taste
