Instructions
1.
Prepare the cauliflower rice by grating fresh cauliflower or using pre-packaged cauliflower rice.
2.
In a large bowl, combine the cauliflower rice, chickpeas, cucumber, tomatoes, avocado, feta cheese, and Kalamata olives.
3.
Drizzle the lite Italian dressing over the salad and toss gently to combine.
4.
Season with salt and pepper to taste.
5.
Garnish with fresh parsley if desired and serve immediately.
