Instructions

  • 1.

    In a large bowl, combine the garbanzo beans, spinach, bell peppers, artichoke hearts, and red onion.

  • 2.

    In a separate small bowl, mix the Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.

  • 3.

    Pour the yogurt mixture over the salad and toss gently to combine all ingredients evenly.

  • 4.

    Lay out the whole grain or low-carb wraps and fill each with the chickpea salad mixture.

  • 5.

    Roll the wraps tightly, slice in half, and serve immediately or wrap in foil for later.

    1 can (15 oz) garbanzo beans, drained and rinsed

  • 2.

    2 cups fresh spinach, chopped

  • 3.

    1 cup bell peppers, diced (any color)

  • 4.

    1 cup artichoke hearts, chopped (canned or frozen)

    1/4 cup red onion, finely chopped

  • 6.

    1/4 cup plain Greek yogurt (or low-fat yogurt)

  • 7.

    1 tablespoon lemon juice

  • 8.

    1 teaspoon garlic powder

  • 9.

    Salt and pepper to taste

  • 10.

    Whole grain or low-carb wraps
