Instructions
1.
Preheat the air fryer to 400°F (200°C).
2.
Season the cod fillets with salt and pepper, then coat them in panko breadcrumbs.
3.
Spray the air fryer basket with olive oil spray and place the cod fillets inside.
4.
Cook the cod for about 10-12 minutes, or until golden brown and cooked through.
5.
While the cod is cooking, prepare the salad by combining lettuce, chickpeas, red onion, and salami in a large bowl.
6.
Drizzle the light vinaigrette dressing over the salad and toss to combine.
7.
Once the cod is done, serve it alongside the chickpea salad.

4 pieces of cod fillets (about 4 oz each)

1 cup panko breadcrumbs

1 can (15 oz) chickpeas, drained and rinsed

4 cups lettuce, chopped

1/2 red onion, thinly sliced

4 oz salami, thinly sliced
7.
1/4 cup light vinaigrette dressing
8.
Salt and pepper to taste
