Instructions

  • 1.

    In a large bowl, combine the mixed greens, chickpeas, cucumber, radish, carrot, pico de gallo, cilantro, and onion.

  • 2.

    Add the cooked brown rice and cara cara orange segments.

  • 3.

    Drizzle with lime juice and season with salt and pepper to taste.

  • 4.

    Toss everything gently to combine and serve immediately.
