Instructions
1.
In a large bowl, combine the cooked quinoa, chickpeas, steamed broccoli, cherry tomatoes, and red onion.
2.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine.
4.
If using, add the fresh spinach and mix until well incorporated.
5.
Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

1 can (15 oz) chickpeas, rinsed and drained

1 cup broccoli florets, steamed

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

Salt and pepper to taste
9.
1 cup fresh spinach (optional for added fiber)
