Instructions
1.
In a large bowl, combine the chickpeas, crumbled tofu, cucumber, red and green bell peppers, cherry tomatoes, and celery.
2.
Drizzle the olive oil over the salad and sprinkle with fresh herbs, salt, and pepper.
3.
Toss everything together gently until well mixed.
4.
Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

1 cup chickpeas, drained and rinsed

1 small block of firm tofu, crumbled
3.
1 cucumber, diced
4.
1 red bell pepper, diced
5.
1 green bell pepper, diced
6.
1 cup cherry tomatoes, halved
7.
1 celery stalk, diced
8.
2 tablespoons olive oil
9.
1 tablespoon fresh herbs (parsley, dill, or oregano), chopped
10.
Salt and pepper to taste
