Instructions

  • 1.

    In a large pot, heat a splash of water or a small amount of olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent (about 3-4 minutes).

  • 2.

    Add the ground turkey or chicken to the pot, cooking until browned (about 5-7 minutes).

  • 3.

    Stir in the diced bell peppers, zucchini, carrots, and spinach, cooking for another 5 minutes until the vegetables start to soften.

  • 4.

    Add the black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

  • 5.

    Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.

  • 6.

    Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

    1 can (28 oz) diced tomatoes (no added sugar)

    1 cup bell peppers, diced (any color)

    1 cup zucchini, diced

  • 7.

    1 cup carrots, diced

  • 8.

    1 cup spinach, chopped

  • 9.

    1 onion, diced

  • 10.

    3 cloves garlic, minced

  • 11.

    2 tbsp chili powder

  • 12.

    1 tsp cumin

  • 13.

    1 tsp paprika

  • 14.

    Salt and pepper to taste

  • 15.

    1 cup low-sodium vegetable broth
