Instructions
1.
Heat olive oil in a large pot over medium heat. Add diced onions and sauté for about 5 minutes until translucent.

Stir in the cumin and chili powder, cooking for another minute to release the spices' flavors.
3.
Add the black beans, red chile sauce, and chopped spinach. Stir well and let simmer for 10-15 minutes, allowing the flavors to meld.
4.
Season with salt and pepper to taste.
5.
Serve hot, topped with pico de gallo, pickled onions, guacamole, and crumbled cotija cheese.
