Instructions
1.
In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
2.
Add the ground turkey or chicken to the pot, cooking until browned (about 7-10 minutes).
3.
Stir in the chili powder, cumin, salt, and pepper, cooking for another 2 minutes to enhance the flavors.
4.
Add the diced tomatoes, vegetable broth, kidney beans, black beans, corn, and bean sprouts. Stir well to combine.
5.
Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.
6.
Taste and adjust seasoning if necessary. Serve hot.

1 can (15 oz) black beans, rinsed and drained
4.
1 cup corn (fresh or frozen)

1 medium onion, diced

2 cups bean sprouts
7.
2 cups diced tomatoes (canned or fresh)
8.
2 cups vegetable broth (low sodium)
9.
2 tablespoons chili powder
10.
1 teaspoon cumin

Salt and pepper to taste
12.
1 tablespoon olive oil (optional, for sautéing)
