Your chili with plant-based ground beef and black beans sounds both delicious and nutritious. Great way to get in your protein and fiber!

Instructions

  • 1.

    Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sautéing until translucent (about 5 minutes).

  • 2.

    Add the plant-based ground beef to the pot, breaking it apart with a spoon. Cook until browned (about 5-7 minutes).

  • 3.

    Stir in the chopped cabbage, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes until the cabbage is slightly softened.

  • 4.

    Add the black beans and diced tomatoes to the pot. Stir well to combine all ingredients.

  • 5.

    Bring the mixture to a simmer, then reduce heat to low. Cover and let it cook for 15-20 minutes, stirring occasionally.

  • 6.

    Taste and adjust seasoning if necessary. Serve hot.

    1 teaspoon smoked paprika

    1 tablespoon olive oil (optional)
