Instructions

1. Preheat your grill or skillet over medium-high heat.

2. Season the chicken breast with olive oil, chipotle seasoning, salt, and pepper.

3. Grill or cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

4. While the chicken is cooking, prepare the vegetables: chop the lettuce, dice the tomatoes, onion, and green pepper.

5. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

6. In a large bowl, layer the lettuce, tomatoes, onion, corn, green pepper, and black beans (if using).

7. Top the salad with the sliced chicken and serve immediately.
