Instructions
1.
1. In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, sautéing for about 5 minutes until softened.

2. Season the chicken breast with cumin, chili powder, salt, and pepper. Add to the skillet and cook for 6-7 minutes on each side until fully cooked.

3. Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet.

4. Stir in the black beans and salsa, cooking for an additional 5 minutes until heated through.

5. Serve the chicken mixture over a bed of brown rice and garnish with chopped green onions.
