Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, toss the diced sweet potatoes and halved Brussels sprouts with olive oil, chipotle powder, garlic powder, salt, and pepper. Spread them on a baking sheet.

Season the chicken breasts with salt, pepper, and smoked paprika. Place them on another baking sheet.
4.
Bake both the vegetables and chicken in the oven for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
5.
While the chicken and vegetables are baking, prepare the southwest sauce by mixing Greek yogurt, lime juice, cumin, and a pinch of salt in a small bowl.
6.
Once everything is cooked, slice the chicken and serve it alongside the roasted vegetables, drizzled with the Greek yogurt southwest sauce.
