Instructions

  • 1.

    1. Preheat your oven to 375°F (190°C).

  • 2.

    2. In a bowl, mix the coconut milk, garlic powder, ginger, salt, and pepper.

  • 3.

    3. Place the chicken breasts in a baking dish and pour the coconut milk mixture over them.

  • 4.

    4. Add the broccoli and bell peppers around the chicken.

  • 5.

    5. Drizzle olive oil over the vegetables and sprinkle with chopped almonds.

  • 6.

    6. Bake for 25 minutes or until the chicken is cooked through and the vegetables are tender.

    7. Garnish with fresh cilantro before serving.
