Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, mix the cornstarch, soy sauce, and lime juice. Add the cubed tofu and toss to coat evenly.

In a separate bowl, combine the shredded coconut and breadcrumbs. Dip each tofu cube into the coconut mixture, pressing gently to adhere.

Place the coated tofu on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
5.
While the tofu is baking, prepare the cabbage and carrot slaw by mixing the green cabbage, red cabbage, and carrots in a large bowl. Season with salt and pepper to taste.

Once the tofu is done, assemble the bowls by placing a generous portion of the slaw at the bottom, topping it with the coconut crusted tofu, and drizzling with sweet chili sauce.

4 cups green cabbage, shredded

2 cups red cabbage, shredded
9.
1 cup carrots, shredded

1/4 cup sweet chili sauce (low sugar)
