Cod cauliflower rice and fajita vegetables. I also had a sweet treat of my low-calorie ice cream with crushed cookies and cookie butter and I still have more calories to spare normally on Sundays. My first meal is not really till about two or 3 PM by the time we get out of service .

Your choice of cod cauliflower rice and fajita vegetables is a great combination of lean protein and fiber-rich foods. Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add sliced onions and bell peppers, sautéing until softened (about 5-7 minutes).

  • 3.

    Season with cumin, paprika, salt, and pepper, stirring to combine.

  • 4.

    Push the vegetables to one side of the skillet and add the cod fillets to the other side.

  • 5.

    Cook the cod for about 4-5 minutes on each side, or until it flakes easily with a fork.

  • 6.

    While the cod is cooking, steam or microwave the cauliflower rice until tender (about 5 minutes).

  • 7.

    To serve, place cauliflower rice on each plate, top with fajita vegetables, and cod fillets.

  • 8.

    Garnish with chopped parsley and a dollop of sour cream.

    2 bell peppers (any color), sliced

    1 medium onion, sliced

  • 7.

    1 teaspoon paprika

    Salt and pepper to taste

  • 9.

    1/4 cup fresh parsley, chopped

  • 10.

    1/2 cup low-fat sour cream
