Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add sliced onions and bell peppers, sautéing until softened (about 5-7 minutes).
3.
Season with cumin, paprika, salt, and pepper, stirring to combine.
4.
Push the vegetables to one side of the skillet and add the cod fillets to the other side.
5.
Cook the cod for about 4-5 minutes on each side, or until it flakes easily with a fork.
6.
While the cod is cooking, steam or microwave the cauliflower rice until tender (about 5 minutes).
7.
To serve, place cauliflower rice on each plate, top with fajita vegetables, and cod fillets.
8.
Garnish with chopped parsley and a dollop of sour cream.

4 cod fillets (about 4 oz each)

4 cups cauliflower rice

2 bell peppers (any color), sliced

1 medium onion, sliced

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste
9.
1/4 cup fresh parsley, chopped
10.
1/2 cup low-fat sour cream
