Instructions

In a large bowl, combine the crab meat, mashed sweet potato, cottage cheese, breadcrumbs, beaten egg, Dijon mustard, parsley, garlic powder, salt, and pepper. Mix until well combined. (5 minutes)

Form the mixture into small patties, about 2-3 inches in diameter. (5 minutes)

Heat a non-stick skillet over medium heat and add a drizzle of olive oil. (2 minutes)

Cook the crab cakes for about 4-5 minutes on each side, or until golden brown and heated through. (10 minutes)
