Had this salad for lunch and dinner! It was lettuce with crab shrimp 1 oz of cheese vinaigrette and tomato. It was enjoyable and I could eat it on the road. This weekend is another crazy travel weekend for me. So Ive been trying to plan ahead better unlike last week. And have lots of healthy snacks.

Instructions

  • 1.

    In a large bowl, combine the mixed lettuce, crab meat, and shrimp. (5 minutes)

  • 2.

    Add the shredded purple cabbage, carrots, and cherry tomatoes to the bowl. (3 minutes)

  • 3.

    Drizzle the light vinaigrette dressing over the salad and toss gently to combine. (2 minutes)

  • 4.

    Top with shredded cheddar cheese before serving. (1 minute)

    8 oz crab meat (fresh or canned)

    8 oz shrimp (cooked and peeled)

    1 oz cheddar cheese (shredded)

  • 6.

    1 cup carrots (shredded)

  • 7.

    1 cup cherry tomatoes (halved)

  • 8.

    1/4 cup light vinaigrette dressing
