Instructions
1.
In a bowl, combine the ground turkey or chicken with oregano, salt, and pepper. Form into small meatballs.

Heat a non-stick skillet over medium heat and cook the meatballs for about 10-12 minutes, turning occasionally until cooked through.
3.
While the meatballs are cooking, prepare the salad. In a large bowl, combine arugula, cucumber, tomatoes, yellow bell pepper, and onion.
4.
Once the meatballs are done, let them cool slightly before adding them to the salad.
5.
Drizzle olive oil and vinegar over the salad, toss gently, and top with crumbled feta cheese.

2 tomatoes, diced

1 yellow bell pepper, diced

1/2 onion, finely chopped

1/2 cup feta cheese, crumbled

1 lb lean ground turkey or chicken (for meatballs)

2 tbsp olive oil
9.
2 tbsp vinegar (red wine or balsamic)
10.
Salt and pepper to taste
11.
1 tsp dried oregano
