Instructions

  • 1.

    In a large bowl, combine the diced chicken, curry powder, diced apple, red onion, and green onion.

  • 2.

    In a separate small bowl, mix the Greek yogurt and lemon juice until smooth.

  • 3.

    Pour the yogurt mixture over the chicken and apple mixture, stirring until everything is well coated.

  • 4.

    Serve the curried chicken salad in lettuce leaves as wraps.

  • 5.

    For the Parmesan roasted edamame, preheat the oven to 400°F (200°C). Toss shelled edamame with a sprinkle of Parmesan and roast for 10-15 minutes until crispy.

    1 head of lettuce (for wraps)

    1 cup edamame, shelled

    1/4 cup almonds, chopped

    2 tablespoons grated Parmesan cheese
