Instructions
1.
Heat olive oil in a large pot over medium heat (about 2 minutes).

Add chopped onion and minced garlic, sauté until translucent (about 5 minutes).

Stir in diced chicken breast and cook until browned (about 5-7 minutes).

Add curry powder, salt, and pepper, stirring to coat the chicken evenly.

Incorporate chopped cabbage and diced tomatoes, mixing well.
6.
Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes.
7.
Add spinach (if using) and cook for an additional 5 minutes until wilted.
8.
Serve hot, garnished with fresh herbs if desired.
