Instructions
1.
1. Hard boil the eggs: Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in ice water.

2. Peel the eggs and chop them into small pieces.
3.
3. In a mixing bowl, combine Greek yogurt, Dijon mustard, dill, celery, red onion, salt, and pepper.

4. Gently fold in the chopped eggs until well combined.
5.
5. If using, add chopped spinach for extra fiber and mix well.
6.
6. Serve immediately or refrigerate for up to 3 days.

6 large eggs

1/2 cup plain Greek yogurt (low-fat or non-fat)

1 tablespoon Dijon mustard
4.
1 tablespoon fresh dill (or 1 teaspoon dried dill)
5.
1/4 cup chopped celery
6.
1/4 cup chopped red onion
7.
Salt and pepper to taste
8.
1 cup fresh spinach (optional, for added fiber)
