Eggplant and chickpeas stew with cumin and turmeric and a slice of whole wheat bread

Thanks for the update Martina. Your eggplant and chickpeas stew sounds delicious and nutritious. Two more dinners to go this week lets keep it up!

Instructions

  • 1.

    Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent.

  • 2.

    Stir in minced garlic, cumin, turmeric, and paprika. Cook for another 2 minutes until fragrant.

  • 3.

    Add diced eggplant and cook for about 10 minutes, stirring occasionally, until softened.

  • 4.

    Pour in the diced tomatoes and chickpeas. Season with salt and pepper. Bring to a simmer and cook for 10-15 minutes.

  • 5.

    Stir in spinach and cook until wilted, about 2-3 minutes.

  • 6.

    Serve hot with whole wheat bread on the side.

    1 can (15 oz) chickpeas, drained and rinsed

  • 3.

    1 can (14 oz) diced tomatoes, no added sugar

  • 4.

    1 onion, chopped

  • 5.

    3 cloves garlic, minced

  • 6.

    1 tablespoon olive oil

  • 7.

    1 teaspoon cumin

  • 8.

    1 teaspoon turmeric

  • 9.

    1 teaspoon paprika

  • 10.

    Salt and pepper to taste

  • 11.

    2 cups spinach, fresh or frozen

  • 12.

    4 slices whole wheat bread
