We dont always have time to cook a full dinner like this but today we did :) Pork tenderloin avocado/tomato/basil/parm with vinegar and fresh corn.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Season the pork tenderloin with salt and pepper. Place it in a baking dish and roast for 20 minutes or until the internal temperature reaches 145°F (63°C).

  • 3.

    While the pork is cooking, husk the corn and boil it in salted water for about 5-7 minutes until tender.

  • 4.

    In a bowl, combine diced avocados, halved cherry tomatoes, fresh basil, and grated Parmesan cheese. Drizzle with balsamic vinegar and toss gently.

  • 5.

    Once the pork is done, let it rest for 5 minutes before slicing.

  • 6.

    Serve the sliced pork with the avocado salad and corn on the side.

    1 cup cherry tomatoes, halved

    1 cup fresh basil leaves

    2 tablespoons balsamic vinegar

  • 7.

    1 ear of fresh corn, husked

  • 8.

    Salt and pepper to taste
