Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

    Season the pork tenderloin with salt, pepper, and olive oil. Place it in a baking dish.

    Roast the pork in the oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.

  • 4.

    While the pork is cooking, prepare the brown rice according to package instructions.

  • 5.

    In a large bowl, combine the cooked brown rice, chickpeas, cherry tomatoes, kalamata olives, and spinach (if using).

  • 6.

    Drizzle the balsamic vinaigrette over the mixture and toss to combine.

  • 7.

    Serve the sliced pork over the rice mixture and top with crumbled feta cheese.
