Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Rub the pork tenderloin with olive oil, garlic powder, salt, and pepper.

  • 3.

    Place the pork on a baking sheet and surround it with sliced carrots.

  • 4.

    Roast in the oven for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

  • 5.

    While the pork is roasting, steam the cauliflower florets until tender, about 10 minutes.

  • 6.

    In a bowl, mash the steamed cauliflower and mix in the cooked chickpeas, salt, and pepper to taste.

  • 7.

    Once the pork is done, let it rest for 5 minutes before slicing.

  • 8.

    Serve the sliced pork with roasted carrots and mashed cauliflower on the side, garnished with fresh herbs.
