Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the pork tenderloin with salt and pepper, then rub with olive oil.
3.
Place the pork in a baking dish and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
4.
While the pork is cooking, heat a skillet over medium heat and add the sliced bell peppers and chopped green chili. Sauté for about 5-7 minutes until tender.
5.
In a separate bowl, mix the broccoli slaw with the low-sugar barbecue sauce.
6.
Once the pork is done, let it rest for 5 minutes before slicing.
7.
Serve the sliced pork with the sautéed peppers and broccoli slaw on the side.
