Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, toss the halved Brussels sprouts with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper. Spread them on a baking sheet.

Rub the pork tenderloin with the remaining olive oil, thyme, salt, and pepper.
4.
Place the pork tenderloin on the same baking sheet as the Brussels sprouts.
5.
Roast in the oven for about 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
6.
Let the pork rest for 5 minutes before slicing.
7.
If using spinach, sauté it in a pan with a little olive oil until wilted, about 2-3 minutes.
8.
Serve the sliced pork tenderloin with roasted Brussels sprouts and sautéed spinach.
