Instructions
1.
In a blender, combine the tomatoes, cucumber, bell pepper, red onion, garlic, and spinach.
2.
Add the vegetable broth, olive oil, and red wine vinegar.
3.
Blend until smooth, adjusting the consistency with more broth if desired.
4.
Season with salt and pepper to taste.
5.
Chill in the refrigerator for at least 30 minutes before serving.
