“We made a brown basmati rice bowl with tomatoes spinach 1/2 avocado and topped with 2 fried eggs; we added salt/pepper to taste and a tiny bit of chilli oil for a kick. I think 2 fried eggs might have been a little too much it did take me a while to finish it but I did have approximately 500mL of water with it so I may have watered myself out..? Overall I feel like this kept me full and was a delicious dinner.”

Instructions
1.
In a non-stick skillet, heat the chili oil over medium heat (about 1-2 minutes).
2.
Add the diced tomatoes and spinach, sautéing until the spinach is wilted (about 3-4 minutes).
3.
Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked (about 2-3 minutes).
4.
Add the cooked brown basmati rice to the skillet, mixing everything together. Season with salt and pepper to taste.
5.
Serve the rice bowl topped with sliced avocado.
