Instructions
1.
Prepare the brown rice according to package instructions (about 20 minutes).
2.
While the rice is cooking, rinse and drain the black and red beans.
3.
In a large bowl, combine the mixed lettuce, cherry tomatoes, bell peppers, carrots, black beans, and red beans.
4.
Once the rice is cooked, let it cool slightly before adding it to the salad.
5.
Add the cooked shrimp and sliced turkey sausage to the salad.
6.
Toss everything together gently to combine, ensuring even distribution of ingredients.

4 cups mixed lettuce (romaine, spinach, etc.)

1 cup cherry tomatoes, halved
3.
1 cup bell peppers, diced (any color)
4.
1 cup carrots, shredded
5.
1 cup black beans, rinsed and drained
6.
1 cup brown rice, cooked
7.
1 cup red beans, rinsed and drained
8.
1 cup shrimp, cooked and peeled
9.
1 cup turkey sausage, sliced
10.
1/2 cup onions, diced
