Same salad as last night minus the tortilla strips. Garlicky brown rice with orange bell pepper and spinach topped with seasoned strips of pork. This dinner was SO good!

Instructions

  • 1.

    Cook the brown rice according to package instructions (about 20-25 minutes).

  • 2.

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

  • 3.

    Add the sliced pork to the skillet, season with paprika, cumin, salt, and pepper. Cook for about 5-7 minutes until the pork is browned and cooked through.

  • 4.

    Stir in the chopped spinach and diced orange bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender.

  • 5.

    In a large bowl, combine mixed greens, cherry tomatoes, corn, black beans, and green olives. Toss with a light vinaigrette if desired.

  • 6.

    Serve the garlicky pork over a bed of brown rice alongside the mixed greens salad.

    1 cup corn (fresh or frozen)

    1 cup black beans, rinsed and drained

  • 9.

    1/4 cup green olives, sliced

  • 10.

    2 cloves garlic, minced

  • 11.

    1 tsp paprika

  • 12.

    1 tsp cumin

  • 13.

    1 tbsp olive oil

  • 14.

    Salt and pepper to taste
