Instructions
1.
In a large bowl, combine the cooked yellow rice, diced chicken, cucumber, red onion, green bell pepper, and spinach. (5 minutes)
2.
Drizzle the tzatziki sauce over the salad mixture and toss gently to combine. (2 minutes)
3.
Season with salt and pepper to taste. (1 minute)
4.
Serve immediately or refrigerate for up to 2 hours before serving.
