Instructions
1.
In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives.
2.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine.
4.
Sprinkle the low-fat feta cheese on top and serve with almond crackers on the side.
