Instructions
1.
1. Preheat your grill or skillet over medium heat.

2. Season the salmon fillets with olive oil, salt, and pepper.

3. Grill or pan-sear the salmon for about 4-5 minutes on each side, or until cooked through.

4. While the salmon is cooking, prepare the salad by combining cucumber, red bell pepper, kalamata olives, feta cheese, and dill in a large bowl.

5. Drizzle with red wine vinegar and toss gently to combine.

6. Once the salmon is cooked, place it on top of the salad and serve immediately.

4 cups cucumber, diced

2 cups red bell pepper, diced

1 cup kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh dill, chopped

4 salmon fillets (about 4 oz each)

2 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste
