Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, pepper, and parsley. Mix until well combined.

Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

Bake the meatballs for 20-25 minutes, or until cooked through and golden brown.

While the meatballs are baking, cook the orzo according to package instructions, using vegetable broth instead of water for added flavor.

In a skillet, sauté the sliced bell peppers and onion over medium heat until softened, about 5-7 minutes.

In a small bowl, mix the Greek yogurt with lemon juice, salt, and pepper to create a sauce.

Once everything is cooked, serve the meatballs over the orzo, topped with sautéed vegetables, diced tomatoes, and a drizzle of the yogurt sauce.

16.
1/2 cup plain Greek yogurt (for sauce)
