Bean and veggie burger with green salad and baked potato wedge

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Toss the potato wedges with olive oil, salt, and pepper. Spread them on a baking sheet and bake for 25-30 minutes until golden and crispy.

  • 3.

    In a large bowl, mash the black beans with a fork. Add quinoa, bell pepper, onion, corn, cumin, garlic powder, salt, pepper, and breadcrumbs. Mix until well combined.

  • 4.

    Form the mixture into patties and cook on a non-stick skillet over medium heat for about 5-7 minutes on each side until golden brown.

  • 5.

    Assemble the burgers on pretzel buns with mixed greens and tomato slices.

  • 6.

    Serve with the baked potato wedges and drizzle balsamic vinegar over the salad.

    4 whole grain pretzel buns

  • 11.

    4 cups mixed greens (lettuce, spinach, etc.)

    1 medium tomato, sliced

  • 13.

    2 medium potatoes, cut into wedges

  • 14.

    1 tbsp olive oil

  • 15.

    1 tbsp balsamic vinegar
