Instructions

  • 1.

    Cook the whole wheat rotini pasta according to package instructions. Drain and set aside.

  • 2.

    In a large bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, black olives, feta cheese, cucumber, mixed greens, and green bell pepper.

  • 3.

    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.

  • 4.

    Pour the dressing over the pasta salad and toss gently to combine.

  • 5.

    Top with chopped pecans for added crunch and serve immediately or chill in the refrigerator for 30 minutes before serving.
