Instructions

1. Preheat the grill to medium-high heat.

2. Season the chicken breasts with olive oil, salt, and pepper.

3. Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

4. While the chicken is grilling, steam the green beans for about 5 minutes until tender but still crisp.

5. In a bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, and a pinch of salt to make the salsa.

6. Once the chicken is cooked, let it rest for a few minutes before slicing.

7. Serve the grilled chicken over brown rice, topped with green beans and mango salsa.
