Instructions

  • 1.

    Preheat your grill to medium-high heat (about 375°F).

  • 2.

    Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

  • 3.

    Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

  • 4.

    While the chicken is grilling, toss the mixed roasted vegetables with a little olive oil, salt, and pepper, and roast them in the oven at 400°F for about 20 minutes.

    If using spinach, sauté it in a pan for 2-3 minutes until wilted.

  • 6.

    Once the chicken is done, let it rest for a few minutes before slicing.

  • 7.

    Serve the grilled chicken over a bed of roasted vegetables and spinach, drizzled with chimichurri sauce.
