Ate at the cafeteria. There were no options for a whole grain cracker or roll. Opted for chicken

Nicely done Cara I like that you opted for skinless and grilled chicken Its a bit of a bummer that there were no whole grain options available but you made the best choice given the circumstances

Instructions

  • 1.

    1. Preheat your grill to medium-high heat.

  • 2.

    2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.

  • 3.

    3. Coat the chicken breasts with the mixture and let them marinate for 10 minutes.

  • 4.

    4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

  • 5.

    5. While the chicken is grilling, sauté the spinach, cherry tomatoes, and bell peppers in a pan over medium heat for about 5-7 minutes until tender.

  • 6.

    6. Drizzle balsamic vinegar over the sautéed vegetables and mix well.

  • 7.

    7. Serve the grilled chicken on a plate with the sautéed vegetables on the side.

  • 1.

4 skinless chicken breasts (about 6 oz each)
