Grilled chicken sweet potato/potatoe mix papaya watermelon cantaloupe and pineapple

One more to go! Your choice of grilled chicken is a great source of lean protein and the sweet potato mix adds a nice touch of fiber. The fruits youve included especially the watermelon and cantaloupe are a refreshing way to add some natural sweetness to your meal love it!

Instructions

  • 1.

    Preheat your grill to medium-high heat (about 375°F).

  • 2.

    In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.

  • 3.

    Coat the chicken breasts with the seasoning mixture and let them marinate for 10 minutes.

  • 4.

    While the chicken is marinating, boil the diced sweet potatoes and potatoes for about 10 minutes until slightly tender.

  • 5.

    Drain and toss the potatoes with a little olive oil, salt, and pepper.

  • 6.

    Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.

  • 7.

    In the last 5 minutes of grilling, add the mixed vegetables to the grill.

  • 8.

    Once everything is cooked, serve the grilled chicken with the potato mix and a side of fresh fruit (papaya, watermelon, cantaloupe, pineapple).

  • 9.

    Garnish with fresh herbs if desired.

    2 cups mixed vegetables (carrots, bell peppers, etc.)

    1 cup papaya, diced

  • 6.

    1 cup watermelon, diced

  • 7.

    1 cup cantaloupe, diced

  • 8.

    1 cup pineapple, diced

  • 9.

    2 tablespoons olive oil

  • 10.

    1 teaspoon garlic powder

  • 11.

    1 teaspoon paprika

  • 12.

    Salt and pepper to taste

  • 13.

    Fresh herbs (optional, for garnish)
