Instructions
1.
Preheat your grill to medium-high heat (about 375°F).
2.
In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
3.
Coat the chicken breasts with the seasoning mixture and let them marinate for 10 minutes.
4.
While the chicken is marinating, boil the diced sweet potatoes and potatoes for about 10 minutes until slightly tender.
5.
Drain and toss the potatoes with a little olive oil, salt, and pepper.
6.
Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
7.
In the last 5 minutes of grilling, add the mixed vegetables to the grill.
8.
Once everything is cooked, serve the grilled chicken with the potato mix and a side of fresh fruit (papaya, watermelon, cantaloupe, pineapple).
9.
Garnish with fresh herbs if desired.

1 cup papaya, diced

1 cup watermelon, diced

1 cup cantaloupe, diced
8.
1 cup pineapple, diced
9.
2 tablespoons olive oil
10.
1 teaspoon garlic powder
11.
1 teaspoon paprika
12.
Salt and pepper to taste
13.
Fresh herbs (optional, for garnish)
