Instructions
1.
Preheat your grill or grill pan over medium-high heat (about 5 minutes).
2.
In a bowl, mix olive oil, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts with this mixture.
3.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
4.
While the chicken is grilling, steam or sauté the riced cauliflower until tender (about 5-7 minutes).

In a separate pot, heat the black beans until warm.
6.
Once the chicken is cooked, brush a small amount of BBQ sauce on top.
7.
Serve the grilled chicken over a bed of riced cauliflower and black beans. Add fresh spinach for extra fiber if desired.

4 boneless, skinless chicken breasts (or thighs)

2 cups riced cauliflower

1 can (15 oz) black beans, drained and rinsed

2 tablespoons low-sugar BBQ sauce

1 tablespoon olive oil

1 teaspoon garlic powder
7.
1 teaspoon onion powder
8.
Salt and pepper to taste
9.
Fresh spinach (optional, for added fiber)
