Instructions

1. Preheat your grill to medium-high heat.

2. In a bowl, mix olive oil, garlic powder, cumin, salt, and pepper. Coat the chicken breasts with this mixture.

3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

4. While the chicken is grilling, cook the brown rice according to package instructions.

5. In a skillet, sauté the diced onion and bell peppers over medium heat for about 5-7 minutes until softened. Add corn and cook for an additional 2 minutes.

6. Serve the grilled chicken with brown rice, sautéed vegetables, and a generous scoop of salsa.
