Youre halfway through your weekly target of having 2 meals a day. Your dinner with grilled chicken roasted red potatoes and grilled zucchini looks delicious :)

Instructions

  • 1.

    Preheat your grill to medium-high heat (about 375°F).

  • 2.

    In a bowl, toss the quartered red potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet.

  • 3.

    Place the potatoes in the oven at 400°F for 20 minutes, flipping halfway through.

  • 4.

    While the potatoes are roasting, season the chicken breasts with the remaining olive oil, salt, and pepper.

  • 5.

    Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.

  • 6.

    Add the zucchini slices to the grill during the last 5 minutes of cooking, turning occasionally until tender.

  • 7.

    If using spinach, sauté it in a pan with a little olive oil until wilted, about 2-3 minutes.

  • 8.

    Serve the grilled chicken with roasted potatoes, grilled zucchini, and sautéed spinach.
