I made grilled chicken with a shredded veggie mix. Then I added green peppers & onionlow fat cheese & a tablespoon of sour cream. It was yummy & filling. How was this?

Instructions

  • 1.

    1. Preheat your grill or grill pan over medium-high heat.

  • 2.

    2. In a bowl, mix olive oil, garlic powder, cumin, salt, and pepper. Coat the chicken breasts with this mixture.

  • 3.

    3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

  • 4.

    4. While the chicken is grilling, sauté the sliced onion and green bell pepper in a non-stick pan over medium heat for about 5 minutes until softened.

  • 5.

    5. In a large bowl, combine the shredded mixed vegetables, black beans, sautéed onion, and green pepper.

  • 6.

    6. Once the chicken is cooked, slice it and add it to the vegetable mixture.

  • 7.

    7. Top with low-fat cheese and a tablespoon of sour cream before serving.

    1 cup black beans, rinsed and drained

    1 green bell pepper, sliced

    1 onion, sliced

  • 6.

    1 cup low-fat cheese, shredded

  • 7.

    1 tablespoon low-fat sour cream

  • 8.

    1 tablespoon olive oil

  • 9.

    1 teaspoon garlic powder

  • 10.

    1 teaspoon cumin

  • 11.

    Salt and pepper to taste
