Instructions
1.
Preheat your grill to medium-high heat (about 375°F).
2.
In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
3.
Coat the chicken breasts with the seasoning mixture and let them marinate for about 10 minutes.
4.
While the chicken is marinating, boil the sweet potatoes in salted water for about 15 minutes or until tender. Drain and mash with a fork.
5.
Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
6.
In a separate pan, sauté the zucchini and squash in a little olive oil for about 5-7 minutes until tender.
7.
Serve the grilled chicken alongside the mashed sweet potatoes and sautéed vegetables. Optionally, add fresh spinach for extra fiber.

Fresh spinach (optional, for added fiber)
